Is it too late to talk about Easter? Maybe. We can make an exception for Corn right? No. Well maybe for a Corn Casserole?! Are you still with me? Good. I made this bad boy on Easter Sunday and boy was he bad! I ate the whole thing almost by myself. (Don’t judge me) Too late? During any holiday the fun thing about Pinterest, is that recipes start popping up like crazy. Sometimes I remember a holiday is coming thanks to Pinterest. So when I found this recipe, I knew it would be one of our side dishes for Easter. The ingredients are super easy to find, some you might have already. The recipe (found here) was actually super easy too. You know, just like I like them. I was in love with the packaging from one of ingredients that I needed,” Jiffy’s  Corn Muffin Mix”. It was so retro that I literally took a picture of it just to show you. After about 55 minutes in the oven you will have the best corn casserole you will ever have. No joke.
