Inspiration Nook Cravings – Black Bean Burgers!

Hello there friends, it’s been a long time huh? Hope this post finds you all well and happy! I’ve been pretty busy lately with work and wedding planning. I’m so looking forward to those extra hours of sunlight thanks to daylight savings. This always inspires me to get more photos done for this little internet corner of mine. Or should I say ours? Anyways, I wanted to share these amazing black bean burgers I made yesterday. I had my first back in the Midwest during the holidays and I was immediately hooked. I came across some pins on Pinterest so I decided to finally make them at home. I had to convince the mister to have them since there isn’t any meat in them. He sure loves “real” burgers! Well, the fact that he finished his first was a huge win in my book! HA! I followed these two different recipes (here & here). I just felt like mixing some ingredients we both liked to be safe and they turned out amazing!!!! I used spicy avocado, pico de gallo and a little bit of feta cheese as our toppings. They were just delicious! Give it a shot if you feel like having a “healthy” burger. Have you ever had a black bean burger?

Inspiration Nook Cravings – Cronuts!

Ladies and gents I’m back. Not sure If you’ve missed me. I sure did. It’s been a little crazy lately over here. From birthday celebrations, to getaways and a business trip to NY. Plus the NFL is back. Wow, just wow. Time is flying by. Hope you guys are enjoying the end of the summer. I sure cannot believe the Halloween decorations I’m seeing and the Xmas talk I’m hearing. Anywho, I did the most important thing to do this year. I had a Cronut. HA No, I did not stand in line at 4am in New York. I simply went to my favorite doughnut shop down the street. I went in and out. After my first bite, I totally get the craze. These things are tasty. If you haven’t yet, go find one. If you do, come back and tell me. Would love to know what you think. Inspiration Nook Cravings – Grilled-Peach Pizza with Prosciutto!

Oh-My-God! That’s exactly what I said after I took the first bite. I found this recipe last week on Pinterest. The grilled-peaches intrigued me. The prosciutto sold me. I’ve never grilled peaches before and I was up for the challenge. Of course, my friend Martha Stewart came up with this awesome recipe. It took me less than 20 minutes to make it. That my friends is a win after a long day at the office. I ended up using naan bread instead of the pizza crust and added a bit of feta cheese on top after I saw it in our fridge. HA! It wasn’t part of the recipe but it was a great addition. Check out Martha’s recipe here and let me know if you try it. Guys, this one is a keeper. Bon appetite!

Inspiration Nook Cravings – Cherry Berry Yogurt Pops!

Friends, I’m proud to announce the mister and I are proud new owners of a ….Magic Bullet! Our lives have changed forever. HAHA That thing is magical indeed. We’ve been creating smoothies nonstop. I made this Pistachio Crusted Tilapia recipe the other day too and it was great. The possibilities are endless and we are both having too much fun. With that said, I made these cute yogurt pops Saturday. The process for these is quite long but it was perfect for me between laundry loads, talk about multitasking! I followed this recipe by Erin from the Magic Bullet blog. It was very simple plus they’re healthy & delicious. Have you made yogurt pops before? Any magic bullet recipes you want to share?

Inspiration Nook Cravings – Oreo Truffles

Last week I was trying to come up with something fun for a potluck at work. After a phone call with my mom I ended up with this recipe. Who knew my mom would come to the rescue instead of Pinterest? (Thanks Mom!) The ingredients are simple, the process is not too hard. Just imagine… Oreos + Almonds = Yum!

What you need is one package of Oreos, one 8 oz. package of cream cheese, two 4.4oz Hershey’s chocolate bars and sliced almonds to taste (I added almost the full little bag). Start by mashing up the Oreos, you can either use a food processor, blender or a Ziploc bag. Next you combine the Oreos, cream cheese and almonds together in a bowl. In the end you will have a dough like mixture. Put it in the fridge for an hour, or if you are in a rush, in the the freezer for like 25 minutes. Next, you simply form the dough mixture into balls (golf ball size or smaller). Melt the chocolate bars in a pot and roll the balls into it. I found a melon baller to be very helpful to dip the balls into the melted chocolate. Place them on a baking sheet and in the fridge they go. After an hour they are ready to eat and they will be crunchy on the outside and soft on the inside. This recipe makes around 25 to 30 truffles. It all depends on how big you make them. Easy right?

Inspiration Nook Cravings – Prosciutto Appetizer

Oh Pinterest, you scored again. Another easy recipe with one of my favorite things ever, Prosciutto! I’m not kidding, the day I pinned this I went and got whatever I didn’t have to imitate it. I switched it up a bit by using cheddar cheese instead of Gouda as the recipe called for, it simply hit the spot It’s a great combination of flavors that anyone can create based on their own taste. Daily Inspiration – Macaroons!

I had my very first macaroon this weekend. I know, don’t judge me, it took me a long time to try them. Not sure what took me so long because these things are delicious!!! I stopped by Lette Macarons and it was such a cute little space that the whole presentation made it worth the price. Have you had any? What is your favorite one? I loved the chocolate and lemon one!

Inspiration Nook Cravings – Asparagus + Poached Eggs

I absolutely love both. Do you? Asparagus are so yummy anytime of the day and poached eggs are simply delicious. Sunday morning I woke up wanting something special for breakfast without having to leave the house. I honestly wish I could have this every morning but then again, weekend mornings wouldn’t feel as special then. I made this with what I had in the fridge. I guess the possibilities are endless. To make mine special, I used a slice of prosciutto (my all time fave) and sprinkled a bit of Parmesan & Asiago cheese on top. Perfect mix for the perfect breakfast. Don’t you love crazy concoctions from your fridge?

Inspiration Nook Cravings – Zucchini Muffins

Have you ever cook or baked something without ever having it before? That’s what I did when it came to these. I’ve heard about zucchini bread and/or muffins but never actually had them. We had some zucchinis in the fridge and I simply went for it. I followed this easy recipe and they were a success. Even though someone had said they weren’t going to have any, at this time, they have had more than me HA! I just love having all the ingredients for a spontaneous baking adventure. They were the perfect snack for the weekend. Have you ever had zucchini bread or muffins before? Let me hear ya!

Inspiration Nook Cravings – Bagel + Cream Cheese + Tomatoes!

I bet eating healthy is on everyone’s “resolution” list. Am I right? It’s one of those things you start after the holidays and then slowly fades away. I’ve been trying to go back to “normal” after the holidays and travel. This bagel mix has got to be the best combination ever. Have you tried this before? It will make your morning bagel a “healthy” one. I promise I’ll eat bagels in moderation.
