Hello there friends, it’s been a long time huh? Hope this post finds you all well and happy! I’ve been pretty busy lately with work and wedding planning. I’m so looking forward to those extra hours of sunlight thanks to daylight savings. This always inspires me to get more photos done for this little internet corner of mine. Or should I say ours? Anyways, I wanted to share these amazing black bean burgers I made yesterday. I had my first back in the Midwest during the holidays and I was immediately hooked. I came across some pins on Pinterest so I decided to finally make them at home. I had to convince the mister to have them since there isn’t any meat in them. He sure loves “real” burgers! Well, the fact that he finished his first was a huge win in my book! HA! I followed these two different recipes (here & here). I just felt like mixing some ingredients we both liked to be safe and they turned out amazing!!!! I used spicy avocado, pico de gallo and a little bit of feta cheese as our toppings. They were just delicious! Give it a shot if you feel like having a “healthy” burger. Have you ever had a black bean burger?
