Inspiration Nook Cravings – Prosciutto Appetizer

Oh Pinterest, you scored again. Another easy recipe with one of my favorite things ever, Prosciutto! I’m not kidding, the day I pinned this I went and got whatever I didn’t have to imitate it. I switched it up a bit by using cheddar cheese instead of Gouda as the recipe called for, it simply hit the spot It’s a great combination of flavors that anyone can create based on their own taste. Inspiration Nook Cravings – Asparagus + Poached Eggs

I absolutely love both. Do you? Asparagus are so yummy anytime of the day and poached eggs are simply delicious. Sunday morning I woke up wanting something special for breakfast without having to leave the house. I honestly wish I could have this every morning but then again, weekend mornings wouldn’t feel as special then. I made this with what I had in the fridge. I guess the possibilities are endless. To make mine special, I used a slice of prosciutto (my all time fave) and sprinkled a bit of Parmesan & Asiago cheese on top. Perfect mix for the perfect breakfast. Don’t you love crazy concoctions from your fridge?

Inspiration Nook Cravings – Zucchini Muffins

Have you ever cook or baked something without ever having it before? That’s what I did when it came to these. I’ve heard about zucchini bread and/or muffins but never actually had them. We had some zucchinis in the fridge and I simply went for it. I followed this easy recipe and they were a success. Even though someone had said they weren’t going to have any, at this time, they have had more than me HA! I just love having all the ingredients for a spontaneous baking adventure. They were the perfect snack for the weekend. Have you ever had zucchini bread or muffins before? Let me hear ya!

Inspiration Nook Cravings – Spinach + Cream Cheese Rolls

I’ve been wanting to make something out of these crescent rolls we had in the fridge forever. I decided to experiment with some spinach and cream cheese. Just because I had one goal, get rid of the crescent rolls. My experiment turned out way better than I expected!

This is what I did… Preheated the oven at 350 degrees. I started by simply separating the rolls on a cookie sheet. I placed a tablespoon of cream cheese on each. Then in a bowl, I mixed a handful of chopped spinach, garlic salt, pepper and a bit of mozzarella cheese. I placed a little bit of the spinach mix on each roll and rolled them up. After 20 minutes in the oven, they were simply delicious! Super easy and perfect for a weekend morning or snack.

Inspiration Nook Cravings – Eggs Cups

The very first recipe I made off Pinterest were these Bacon Egg Cups. When I found this similar recipe over at “Fat Girl Trapped In a Skinny Body” I was intrigued. I made them this past weekend and they were a total hit! Perfect addition for Sunday brunch.

Inspiration Nook Cravings – Bagel + Cream Cheese + Tomatoes!

I bet eating healthy is on everyone’s “resolution” list. Am I right? It’s one of those things you start after the holidays and then slowly fades away. I’ve been trying to go back to “normal” after the holidays and travel. This bagel mix has got to be the best combination ever. Have you tried this before? It will make your morning bagel a “healthy” one. I promise I’ll eat bagels in moderation.

Inspiration Nook Cravings – 3 ingredients Apple Cake!

By now you know how much I enjoy these kinds of recipes (as seen here & here). They are always so much fun to make. Can you guess where I found it? Let’s all say it together… Pinterest!

I followed this easy recipe from A. Liz Adventures and 40 minutes later we were in heaven, cake heaven. I can’t wait to try this with a different fruit. Maybe pineapple? Enjoy!

Inspiration Nook Cravings – Thanksgiving Eggs Benedict

Friday morning I had one mission, find recipes for our leftovers. Enter Pinterest. The minute I saw this pin, which combined my favorites, eggs benedict + thanksgiving leftovers… I knew I had a winner! Luckily for us, all the ingredients were in the fridge. Cue me shouting out loud “score”. It was incredible, the mister loved it too. We immediately agreed that this would be a new tradition after Thanksgiving. Follow this recipe from closet cooking and enjoy the best creation ever. I’m dead serious. (Wish we had more leftovers now).

Inspiration Nook Cravings – Cornbread Pancakes!

I’m going to be honest. I’d never heard of these beauties until last weekend. We were both in shock when we found them on the menu of our favorite brunch spot. Then, after some research browsing on Pinterest, I realized I had all the ingredients at home. I was in heaven, corn heaven. The funny thing is, I had a Jiffy Corn mix from when I made this and the recipe was on the box. On the box people! If only I would’ve seen it months ago. It’s a super easy recipe, all you do is add an egg and 3/4 cups of milk to the mix. I skipped one ingredient (2 Tbsp. of shortening ) and they came out just fine. Our new faves over here on the weekend.

Inspiration Nook Cravings – Ultimate Chocolate Chip Cookie & Oreo Fudge Brownie Bar!

Yes, you read that right. This is the monster of all desserts for us chocolate lovers. When it came time to pick what to make for my birthday, the mister liked this one and it was my first choice too. I guess we are a good match. Prepping it took a bit longer than expected but what a great reward. I took some to work to share and it was gone before lunch time. This will be a hit anywhere I tell you. Be prepared for your house to smell like a bakery for hours too. Simply amazing. If you want to make your own follow Kevin & Amanda’s recipe and be prepared to enjoy your dessert coma!
